Gnocchi (nyoh-kee) is a potato dumpling. Some people get intimidated when attempting a traditional Italian dish, but this dish is very easy to prepare and is one of my favorites!
Step 1: Boil potatoes until fork tender.
Step 2: Wait until cool enough to touch then peel the skin off of each potato.
Step 3: Mash potatoes with potato masher, by hand or a hand mixer.
Step 4: Add salt, nutmeg, parmesan, egg and 1 cup of all purpose four.
Step 5: Knead the dough with your hands, adding whole wheat flour 1 tablespoon at a time.
Step 6: Knead the dough until smooth; the dough will be slightly sticky. Divide the dough into 6 pieces.
Step 7: On a lightly floured surface, using the palms of your hands, roll the 6 pieces out into a rope shape, keeping them at least one inch thick.
Step 8: Cut the ropes into ½ to 1 inch long pieces.
Step 9: Place gnocchi in boiling water and cook until tender. Be sure to stir around a little, to ensure no sticking. The gnocchi will rise to the top when it is ready.
Step 10: Heat large sauté pan with olive oil. Once the pan is hot, sauté the gnocchi until heated through and the gnocchi turns a light brown color. Plate and serve with vegetables and your favorite sauce like our H3 Marinara.

ReplyDeleteHi Merlyn. Here are the ingredients: 3 Potatoes(medium size-Russet), 1 tsp. Salt, ¼ tsp. Nutmeg, 2 T. Parmesan cheese (grated), 1 Egg, 1 c. Flour (all purpose), ¼ c. Whole wheat flour, 2 tsp. Olive oil.
