H3 Recipe: Baked Fruit Strudel

INGREDIENTS:

1/2 cup Low fat granola (H3 granola)

3/4 cup Kiwis, fresh

3/4 cup Strawberries, fresh

1/3 cup Pineapple, fresh

1/2 cup Maple syrup *

1/2 teaspoon Cinnamon

1 Tablespoon Orange juice

1/4 teaspoon Nutmeg

6 sheets Phyllo dough, whole wheat if available

 

PREPARATION:

  • Mix all of the fresh fruit into a strainer, strain for at least 10 minutes.

  • Mix all ingredients in a bowl except Phyllo dough

  • Lay one sheet of dough out on the counter.

  • Lightly coat with vegetable spray.

  • Top with next sheet of dough and spray.

  •  Continue to layer until all six sheets are stacked.

  • Spoon out fruit filling onto bottom of wide section of dough leaving a one inch border on edges.

  • Fold over both sides and roll from the bottom up, leaving the seam side down.

  •  Place on baking paper.

  •  Bake at 350˚F for 30-35 minutes until golden brown.

  •  Slice on an angle into 8 slices.


**Chef’s note: *Using a sugar alternative such as splenda, stevia or light/sugar free maple syrup will lower the calorie count to 99 calories per serving.

**Add sugar-free whip topping to make this a delicious dessert or nonfat yogurt for a sweet breakfast.
