Healthy Recipe: Peanut Butter Hummus

For a protein kick, try a simple and delicious afternoon snack of hummus and colourful veggies. Prepare the hummus and cut the vegetables the night before for a quick and healthy snack that won't spoil dinner appetites.

INGREDIENTS:

2 Cups - Garbanzo beans, drained and rinsed

1 Cup - PB2

½ Cup - Peanut butter or almond butter

1 Cup - Water

1 tsp. - Vanilla extract

2 T. - Sugar or honey

STEPS:

  • Combine all ingredients into a food processor, puree until smooth and whipped.


NUTRITION:

Servings: 20

Serving Size: ¼ cup

Calories: 150kcal

Fiber: 5 grams

Carbohydrates: 17 grams

Protein: 12 grams

Sodium: 210 milligrams

    Yes, you can freeze the peanut butter hummus for 3 months maximum.

  6. Hello Susan,
    PB2 is a product of roasted peanuts that have about 85% of the oil compressed out. Essentially, powdered peanuts, with much less calories and fat. It is available in other brand names too. Very cool stuff!

    Yes, PB2 is usually available at most grocery stores; Kroger, Whole Foods, or Fresh Market. Also, it's available online through Amazon or PB2's website. Enjoy!
