Healthy Dinner Idea: Dijon and Pecan Roasted Pork Tenderloin

Last week, Chef Karla shared perfect Valentine's Dinner side dish, Warmed Brussel Sprout & Farro Salad. Today, it's all about the protein - Dijon and Pecan Roasted Pork Tenderloin. This tender and juicy main dish will shine next to that salad. You're sweetheart will absolutely love this delicious combination.

Ingredients:


½ cup Whole grain dijon

½ cup Pecans, raw, chopped fine

¼ tsp Salt

¼ tsp Black pepper

1 each Pork tenderloin (1 pound)

Method:



  • Preheat oven to 375 degrees F.

  • Season pork with salt and pepper.

  • Coat the pork with the whole grain djion.

  • Place coated pork on a greased sheet pan.

  • Gently press chopped pecans on the top of the tenderloin.

  • Bake in oven for 17-25 minutes until pork reaches the internal temperature of 135 degrees or desired temperature.

  • Let pork rest for 3-5 minutes so it has time to reach 140 degrees.

  • Slice and enjoy!

Slow Cooker Chicken Teriyaki

Here in the Healthy Kitchen, we LOVE our crockpot recipes! It's such an easy way to create delicious meals without standing over a stove for hours at a time. Our Slow Cooker Chicken Teriyaki is a favorite for Guests that love ordering takeout. You get all the flavor without the excess calories and sodium overload.

Ingredients:

8 (4 ounce) breast Chicken breast, boneless and skinless

2 cloves Garlic, minced

½ cup Onion, minced

1/3 cup Honey

½ cup Low sodium soy sauce

¼ cup Rice wine vinegar

1 Tablespoon Ginger, fresh, minced

1/8 teaspoon Black pepper, ground

½ teaspoon Crushed red pepper flakes

4 cups Broccoli, florets

2 Tablespoons Cornstarch

2 Tablespoons Water, cold

Method:

  • Cut chicken breasts into strips and line the bottom of the slow cooker in a single layer, dust cornstarch on top.

  • In a bowl, whisk together garlic, onion, honey, soy sauce, vinegar, ginger, black pepper and crushed red pepper.

  • Pour the mixture over the chicken and combine.

  • Cook on high for 2 ½ hours.

  • Stir in broccoli florets and cook for another 15 minutes on high, or cook until broccoli is tender and bright green.

  • Serve the Chicken Teriyaki as is or over brown rice, enjoy!

5 Ingredient Coconut Shrimp

This is the first of our 5 ingredient recipes: Coconut Shrimp. We'll continue to share different 5 ingredient recipes to help you simplify your healthy meal time! You only need 5 ingredients and in no time you have crispy, delicious Coconut shrimp. Dip these scrumptious Coconut Shrimp into our Sweet and Spicy Sauce to amp up the flavor!

Ingredients:

8 oz Large shrimp (8/10’s), peeled and de-veined (or any other fish)

4 T Coconut, chopped

1 tsp Coconut extract

4 T Panko crumbs

¼ cup Egg beaters or egg whites

Steps:

  • Preheat oven to 375°F.

  • Spray baking sheet with non-stick cooking spray.

  • Prepare two mixing bowls: one with panko crumbs and coconut (dry), and the other with egg beaters and coconut extract (wet).

  • Create an assembly line - shrimp, egg beaters mixture, panko/coconut mixture, and then your baking sheet.

  • Take each shrimp and dip into egg beaters, next coat shrimp in panko/coconut mixture.

  • Then place coated shrimp on your baking sheet and repeat until all the shrimp is coated.

  • Bake in oven for about 10-15 minutes.

Grilled Kale Pesto Chicken and Vegetable Skewers

Whether you're grilling out for a bunch of friends at your house or just sitting down with your family for a summer dinner, this recipe will be the star at any meal. The H3 Healthy Kitchen Grilled Chicken and Vegetable Skewer combines fresh summer vegetables, juicy chicken and a delicious Kale pesto. You can even mix it but by using other proteins, like beef or shrimp and different vegetables like eggplant.

Ingredients:

2 each Chicken breast (4 ounces), large dice

½ each Yellow bell pepper, large dice

8 each Cherry tomato

½ cup Zucchini, skin on, large dice

4 each 8-inch wooden or metal skewer

Pesto:

1 bunch Kale, stems and ribs removed

½ bunch Flat leaf parsley, chopped

3 Tablespoons Pine nuts, toasted

1 each Garlic clove, minced

1 Tablespoon Lemon juice, fresh

Pinch Red pepper flakes

¼ teaspoon Kosher salt

1 Tablespoon Olive oil

Method:

  • Preheat grill and oven to 375 degrees F.


Pesto:

  • Bring a pot of water to a boil.

  • Wash and roughly chop the kale. Blanch the kale in the boiling water for 2 minutes.

  • Remove the kale from water and strain, press water from the leaves.

  • Add parsley, nuts, garlic, lemon juice, red pepper flakes, and salt into a food processor. Pulse until coarsely chopped then scrape down the edges.

  • Transfer drained kale into the food processor. While the processor is on, slowly add oil in a steady stream.

  • If the kale mixture is too thick, thin it out by adding water. Pulse until desired texture is achieved.


Assembly:

  • Soak wooden skewers overnight in water.

  • Mix vegetables and chicken with ¼ cup pesto, massaging the pesto all over these ingredients.

  • Skewer alternating chicken and vegetables on each of the four skewers.

  • Mark on the grill, rotating to each side after 1 minute (4 minutes total on the grill).

  • Place on a greased sheet pan and cook in oven 7-10 minutes or until chicken has reached 160 degrees F, checking with a meat probe.

  • Let it rest 3-5 minutes so they can carry over and cook to 165 degrees F.

  • Serve and enjoy!

2-Step Basil Vinaigrette

With only 7 ingredients, you won't break the bank but you'll impress your family with this flavorful addition. Ingredients:

1 ½ oz. Basil, fresh
½ cup White balsamic vinegar
1 ½ T. Dijon mustard
1 ½ T. Honey or sugar
¼ tsp. Kosher salt
Pepper, to taste
¼ cup Extra virgin olive oil

Method:

  • Add everything but the olive oil to a blender and begin to blend.

  • While the mixture is blending, add the olive oil until mixture is smooth.

Grilled Lavender Peaches with Lemon Yogurt

If you're from the South, you've probably enjoyed your fair share of grilled peaches during the summer time. That sweet smell and flavor are one of our favorite parts of summer, here in the Healthy Kitchen; but this Grilled Lavender Peaches recipe takes grilled peaches to another level. When you add this lemon yogurt topping to the mix, it takes grilled peaches to the top!

Ingredients:

4 each Peaches, halved

Lemon Yogurt Topping

½ cup Plain, nonfat greek yogurt

1 tablespoon Agave nectar

½ teaspoon Lemon zest

1 tablespoon Lemon juice, fresh

Simple Syrup

¼ cup Sugar

¼ cup Water

1 teaspoon Lavender, dry

Method:

  • To make the simple syrup: Place water, sugar and dry lavender in a sauce pot. Turn heat on low and simmer until the sugar is dissolved.

  • Strain and pour syrup over halved peaches. Let this marinate for 10-15 minutes.

  • Heat the grill on high.

  • Place the marinated peaches cut side down and cook for about a minute. Flip over each peach half (to the uncooked side) and cook for another minute.

  • Remove peaches to a serving plate.

  • To make the lemon yogurt: Mix all remaining ingredients, whisk to combine.

  • Place a ½ tablespoon of the yogurt mixture into the center of each peach.

  • Serve and enjoy!

Healthy Cocktail: Blackberry Burst Spritzer

½ each Lime, sliced
8 each Mint leaves, fresh, torn
¼ cup Blackberries
8 ounces Sparkling water
1 ounce Silver tequila

Method:

1. Muddle the limes, mint, and blackberries in the tequila.
2. Add sparkling water, ice, and mix.
3. Enjoy your skinny cocktail!

Healthy Cinco de Mayo Recipe: Grouper Ceviche

Happy Cinco de Mayo from the H3 Healthy Kitchen! We have a new recipe inspired by this festive holiday, Grouper Ceviche. For a perfectly, healthy Cinco de Mayo meal under 400 calories, pair this Grouper Ceviche recipe with our H3 Spanish Rice. For a twist on the traditional margarita, treat yourself with our Margarita Lime Cupcakes OR just stick with the classic and enjoy our 100 calorie H3 Skinny Margarita.

Ingredients:

8 ounces Grouper, diced

½ each Avocado, diced

1 Tablespoon Olive oil

½ each Jalapeno pepper, small diced

½ teaspoon Salt

2 each Garlic cloves, minced

¼ cup Lime juice, fresh

½ each Red onion, small diced

1/2 teaspoon Black pepper, ground

2 tablespoons Cilantro, chopped

Method:

  • In a medium sized bowl combine grouper and lime juice, allow to marinate for about 20-30 minutes in refrigerator, or until a cube of fish no longer looks raw in the center.

  • In a bowl mix together; avocado, olive oil, jalapeno, salt, garlic, red onion, black pepper, and cilantro.

  • Add grouper.

  • Serve cold and enjoy!


Chef’s Note: Traditional ceviche consists of raw seafood tossed with an acidic marinade (think: citrus juice or vinegar) that “cooks” the fish. Feel free to substitute other types of seafood; mahi mahi, scallops, or striped bass.

H3 Skinny White Russian

A White Russian is a classic American cocktail made famous in the 1940’s when vodka was largely distributed from Russia.  Classically, white Russians are served with equal parts vodka, Kahlua (coffee liquor) and heavy cream; but, here's some Healthy Kitchen tips to save yourself almost 90 calories. Just swap in skim milk for the heavy cream then cut the Kahlua amount in half and replace with brewed coffee. Shake, serve and enjoy!

Ingredients:

1 ounce Vanilla Vodka

½ ounce Kahlua Coffee Liquor

½ ounce Brewed Coffee

1 ounce Skim Milk

Method:

  • Combine all ingredients in a glass shaker filled with ice.

  • Shake vigorously!

  • Strain and serve over fresh ice in a high ball glass.

  • Garnish with a few coffee beans.

  • Enjoy!


Bartender's Note:

  • Adding 2 teaspoons of heavy cream will give texture and froth to this beverage for an additional 10 calories.

  • A Black Russian is the same tasty beverage excluding the dairy.  Serve on the rocks.  Shaking is not necessary.

Apple Pecan Brandy Chutney

Serve this H3 Healthy Kitchen show-stopper at your next holiday celebration! This delicious chutney is fat free and great when served over spiced pumpkin mousse or pumpkin coffee cake. At only 50 calories a serving, you can enjoy every last drop.

Ingredients:

¼ cup Honey

1 each Apples, diced

2 tablespoons Brandy

1 each Cinnamon stick

Non-stick Cooking Spray

Method:

  • Preheat a small sauce-pot on medium heat.

  • Lightly spray non-stick cooking spray on the pan.

  • Add the diced apples and cinnamon stick to the pan and lightly sauté for about 3-5 minutes, or until the apples are tender.

  • Deglaze the pan with brandy and allow to cook about 2-3 minutes.

  • Add honey, then cook for an additional 3 minutes or until the chutney has slightly thickened.

  • While chutney is warm, spoon ½ of an ounce over pumpkin mousse.

Last of the Leftovers: Turkey Reuben by Carrie Adams

Are you running out of ideas to use the very last of that leftover turkey? The H3 Healthy Kitchen has come to your rescue. This Turkey Reuben recipe is a fun twist on the traditional Reuben. You get all of the flavors without all of the calories and fat.

Ingredients

2 each Rye bread, slices

4 ounces Turkey, roasted, sliced

1 ounces Swiss cheese, sliced

2 Tablespoons Thousand Island dressing

For the Coleslaw:

½ cup Cabbage, shredded

2 teaspoons Yogurt, plain, non-fat

1 tablespoon Mayonnaise, reduced-fat

½ teaspoon Apple cider vinegar

¼ teaspoon Dijon mustard

1/8 teaspoon Celery seeds

1/8 teaspoon Paprika

½ teaspoon Honey

¼ teaspoon Salt

¼ teaspoon Black pepper, ground

Method:

  • Preheat oven to 375 degrees.

  • In a large bowl combine all coleslaw ingredients, mix well.

  • Place rye bread on a sheet tray. Spread Thousand Island dressing and top with turkey.

  • Scoop ¼ cup of coleslaw on top of turkey and top with cheese.

  • Bake in oven for 4-7 minutes or until cheese has melted.

Last-Minute Holiday Dish: Stuffed Acorn Squash by Carrie Adams

Thanksgiving is upon us! It's time to spend time with family, set your mind on gratefulness and savor delicious Holiday food. But wait, weren't you supposed to bring a dish? Uh oh. Not to worry, the H3 Healthy Kitchen has you covered with a last-minute holiday dish. Easily prepare this healthy and scrumptious Stuffed Acorn Squash recipe.

Acorn Squash recipe

Ingredients:

1 can Pan spray

1 each Acorn squash, cut in half, seeds removed

½ cup Yellow onion, diced

¾ cup Celery, diced

¾ cup Carrot, diced

½ cup Panko bread crumbs

¼ cup Oregano, fresh, chopped

1 tsp Black pepper, fresh, ground

¼ cup Parmesan cheese

Method:

  • Lightly grease a sheet pan, and place both halves of the squash skin side up. Place into an oven preheated to 350˚F, and roast till thermometer can pierce skin and squash with ease. (Approximately 35 - 40 minutes).

  • While squash are roasting, sauté onion, celery, and carrots. Mix hot vegetables with panko, oregano, and black pepper.

  • Stuff vegetable mixture into roasted squash. Top with parmesan cheese, and place back into oven for 10-12 minutes to allow the cheese to melt.

Skinny Cinnamon Appletini

It's the holiday season, you're eating mindfully and sticking to your exercise regimen but you're in the mood to unwind with a nice, light cocktail with a touch of spice. The H3 Healthy Kitchen Skinny Cinnamon Appletini is the perfect low-calorie drink to treat yourself but still hold True* to your new, healthy lifestyle.

Ingredients:

1.5 ounce Apple Soaked Vodka (see: Bartender's Note)

½ tablespoon Calvados (apple brandy)

½ teaspoon Brown Sugar Simple Syrup

1.5 ounce Apple Cider

(Bartender's Note: To make the apple soaked vodka, dice 3 large apples and soak in vodka overnight)  

Simple Syrup:

¼ cup Brown Sugar

½ cup  Water

1 each Vanilla Bean

1 each Cinnamon Stick

Method:

  • To make the simple syrup: Combine brown sugar, water, vanilla bean, and cinnamon stick in a small sauce pot.

  • Heat sauce pot at a medium temperature, slowly bring to a simmer, and cook until sugar dissolves for about 5-7 minutes

  • Allow syrup to cool then strain

  • To assemble the cocktail: Combine vodka, calvados, simple syrup, and cider in a glass shaker filled with ice.

  • Shake vigorously!

  • Strain and serve in a chilled martini glass.

  • Garnish with a sliced apple skewered cinnamon stick.

In the H3 Healthy Kitchen, we love creating recipes using the tastes and flavors of the season. Now that fall is here, it is officially pumpkin season! Everything seems to be pumpkin flavored in the fall. However, all of these popular pumpkin recipes also seem to be unhealthy, processed and filled with sugar. They're sure to leave you feeling tired and groggy. Not our H3 Pumpkin Spiced Energy Bars! These bars prove that Pumpkin Spice can be healthy! This Healthy Pumpkin Spice fall inspired energy bar will keep you feeling good throughout a busy day.

Ingredients:

3 cups Pumpkin, canned

3 scoops Vanilla whey protein powder

3/4 cup Flax seed, ground

3 cups Oats

3 tablespoons Cinnamon, ground

1 1/2 teaspoons Nutmeg, ground

1 1/2 teaspoons Clove, ground

1 teaspoon Salt

1/3 cup Honey

¾ cup Dark chocolate chips

Method:

  • Pre-heat oven to 350°.

  • In a large mixing bowl, combine the: protein powder, flax, oats, cinnamon, nutmeg, salt and clove.

  • In a separate mixing bowl combine the pumpkin and honey.

  • Then combine the dry mixture and the wet pumpkin mixture; fold in the chocolate chips.

  • Lightly spray a ½ sheet tray with non-stick spray then evenly spread batter.

  • Bake for 12-15 minutes or until lightly toasted on top.

  • Remove from oven, allow to cool and cut into 30 servings.

  • Store bars in the refrigerator for up to 7 days, otherwise freeze.

H3 "No Fat" Pumpkin Spice Latte

In celebration of falls favorite drink and International Coffee Day, the H3 Healthy Kitchen whipped up this H3 "No Fat" Pumpkin Spice Latte, as a special, healthy drink recipe. Everything seems to be pumpkin spiced in the fall. It's the ever popular, perfect beverage for the crisp fall season! However, typical pumpkin spice latte's are filled with unnecessary sugars and have little to do with real pumpkin. So in the season of pumpkin spice and indulgence, enjoy this warm, flavorful latte as a treat without the unwanted sacrifice of your healthy diet!

Ingredients:

¾ cup Skim Milk

2 tsp Agave Nectar

2 Tbsp Pumpkin Puree (unsweetened)

½ tsp Vanilla extract

¼ tsp Pumpkin Pie Spice

¾ cup Coffee

Method

  • In a small saucepot, heat while whisking all ingredients together except coffee.

  • When desired temperature is reached- pour into a blender and blend until smooth and frothy.

  • In each glass measure 2 ounces of coffee then add 3 ounces of milk mixture.

  • Stir and enjoy!

H3 Potato Latkes

As the holiday season approaches, the H3 Healthy Kitchen is committed to making new recipes that allow you to eat your favorite holiday foods while still following a healthy lifestyle. The holidays are easily one of the hardest times of the year to stay healthy, but we believe in you! With a little help from some healthy holiday recipes and commitment, you can stay on track!

Try this potato latke recipe! These latkes are so easy to make in advance and reheat/recrisp in the oven, and that means that they can be an especially schedule-forgiving addition to your holiday table.

Potato Latkes Jewish Holiday CT

Ingredients: 

1 Large Russet potato, with skin

3 Tbsp Egg substitute

3 Tbsp All purpose flour

¼ cup Yellow onion

¼ tsp Kosher salt

½ Tbsp Garlic Powder

1 tsp Thyme, fresh

¼ tsp Black pepper, ground

12 servings Applesauce

Method:

  • Preheat oven to 375° F.

  • In a medium bowl, combine: egg substitute, flour, salt, pepper, garlic powder and thyme. Set this mixture aside.

  • Grate the potatoes and onions, be sure to strain the excess water. Add the strained potatoes and onions to the egg mixture bowl and combine.

  • Take 2 tablespoons of potato mixture and form 15 cakes.

  • Heat oil in a pan on medium/medium high heat.

  • Sear cakes in pan for 2 minutes on each side then transfer to a baking dish.

  • Transfer baking dish to preheated oven and cook for 10 minutes or until latkes are heated through.

  • Serve with applesauce.

The "No Fuss" H3 Healthy Chicken Pot Pie

At Hilton Head Health, we value nutrition and recognize that it's a integral part of wellness and weight loss. That's why we take the recipes that you love and turn them into healthy recipes!

With fall just around the corner, it's great to have some healthy comfort food recipes on hand. Like this "No Fuss" H3 Healthy Chicken Pot Pie Recipe, it's not only easy to make but it's a hearty and healthy recipe. Feel free to enjoy this healthy comfort food recipe or add some variety to this traditional dish by changing up the vegetables or using a different protein.

Healthy Chicken Pot Pie Comfort Food

Ingredients:

2 Tablespoons Butter

1 cup Carrots, diced

½ cup Onion, diced

1 cup Celery, diced

1 teaspoon Thyme, fresh, chopped

3 cups Low-sodium chicken stock

2 cups Red bliss potato, cubed

1/3 cup Flour

1/3 cup Water

2 cups Chicken, diced

1 cup Green peas

½ teaspoon Salt

¼ teaspoon Black pepper

1/2 sheet Puff pastry dough

Method:

  • Preheat oven to 400°.

  • To prepare filling, melt 2 teaspoons butter in a large stock pot over medium-high heat. Add carrots, onion, celery, chicken and thyme, cook 8 minutes or until vegetables are soft.

  • Add broth and potato, bring to a boil. Cover and simmer 10 minutes. Combine flour and 1/3 cup water in a small bowl and stir with a whisk until smooth. Return potato mixture to a boil. Slowly drizzle flour mixture into potato mixture, stirring constantly. Cook 1 minute or until mixture thickens.

  • Add peas and 1/2 teaspoon of salt and pepper. Spoon chicken mixture into an large ramekin or ceramic baking dish coated with cooking spray.

  • Place the dough on top of the chicken mixture, pressing the dough to the edge of dish. Cut 2 slits in top of the crust to allow steam to escape.

  • Bake at 400° for 50 minutes or until golden and bubbly. Let stand 10 minutes. Then sit back and enjoy!

Healthy Recipe: H3 Skinny Margarita

For starters, create this Skinny Margarita for any upcoming party or event. Just throw away those processed sugary sweet and sour mixes, grab some simple and fresh ingredients and make the best skinny margarita you have ever tasted!

Skinny Margarita Recipe

Ingredients:

1 ounce Tequila, silver

2 tablespoons Lime juice, fresh

½ teaspoon Salt (optional)

½ tablespoon Agave nectar

Method:

  • Combine tequila, lime juice and agave in a glass shaker filled with ice.

  • Rim one quarter of a margarita glass with salt by using a fresh lime wedge and dip the glass in salt.

  • Shake the skinny margarita mix vigorously!

  • Strain and serve over fresh ice into your salted glass, serve with a wedge of lime.

  • Enjoy!

Gluten free, soy free, dairy free healthy recipe for Patatas Bravas

Ingredients:

16 Potatoes, Red Bliss, quartered

1 T Olive oil

2 T Flaxseed mayonnaise

1 T White wine vinegar

1 tsp Garlic powder

1 tsp Paprika

1 tsp Smoked Paprika

1 tsp Chili powder

1 tsp Cumin

¼ tsp Salt

Method:

  • Preheat oven to 450 degrees.

  • Bring large pan of salted water to a boil.  Add potatoes and cook until tender, but not falling apart.

  • Drain and let cool, transfer to plate or tray.

  • Toss potatoes in olive oil. Spread potatoes onto a sheet tray.

  • Roast potatoes until crispy. (About 30-40 minutes)

  • Mix together vinegar, paprika, smoked paprika, garlic powder, cumin, chili powder, salt and flax mayonnaise sauce in bowl.

  • Pour the mixture over the potatoes and serve hot.

Healthy Recipe: Gremolata

Summer is finally upon us, and there's no better time to enjoy a light, healthy dish. This Healthy Kitchen Gremolata recipe is healthy, flavorful, bright and perfect for a warm summer evening. Serve it with any white fish such as mahi mahi, halibut or sea bass and pair it with fresh vegetables for a delicious, healthy meal.

Gremolata

Ingredients:

1 cup Parsley leaves, fresh, chopped

1 bunch Scallions, green parts chopped, (reserve 3 inches of white section to stuff the fish)

1 each Chili pepper (such as jalapeno), seeded, minced

¼ cup Capers, rinsed, chopped

2 each Garlic cloves, peeled, chopped

1 each Lemon

2 tbsp Extra Virgin olive oil

¼ tsp Coarse black pepper

Method:

  • Coarsely chop 1 cup of the parsley leaves with the garlic and place in a small bowl with the chopped green onions and capers.

  • Seed one of the jalapenos and mince finely.  Add minced jalapenos parsley, green onion and parsley mixture.

  • Zest the lemon, followed by adding the fresh lemon juice into the bowl.  Add 3 T. of the olive oil and black pepper into the sauce and mix well.  Allow the sauce to sit for flavors to enhance.

  • Serve each 4 oz. filet with approximately 2 T. of the sauce.  Enjoy!
